Gingembre
Plante vivace tropicale herbacée d'environ 0,90 m de haut issue d'un rhizome - Feuilles persistantes lancéolées, bisériées, longues et odorantes - Fleurs blanches et jaunes ponctuées de rouge sur les lèvres, avec bractées vertes et jaunes. Un court épi axillaire renfermant des graines noires encapsulées, apparait après la floraison au bout d'une tige couverte d'écailles.

Oléorésine: responsable du "feu" lors de la consommation mais également de l'effet antiémétique et digestif.
Usage
Le gingembre est souvent utilisé comme épice dans la cuisine et on le trouve aussi comme composant dans divers mélanges épices. Il a un goût typique et appétissant. C'est un ingrédient essentiel de la cuisine Asiatique, où il est utilisé pour des plats bien relevés et même pour des pâtisseries. La racine peut même être confite pour en faire de la confiserie.
Ginger Ale est une boisson gazeuse rafraîchissante à base de gingembre. En provenance du Suriname Ginger Ale est maintenant populaire parce qu'elle est non-alcoolisée et pourtant assez épicée.
Le gingembre a une longue histoire d'utilisation médicinale dans la médecine chinoise traditionnelle et ayurvédique. Il a été utilisé pour stimuler la libido et la vitalité mais aussi dans le mal des transports, les nausées, les troubles digestifs et les inflammations.
La recherche scientifique sur le gingembre démontre que cette plante est riche en antioxydants 1-7 et qu'elle a des propriétés immuno-modulatrices. 8-18
